Banana Coconut Protein Loaf

Another great way to restore your body with some extra protein. Whip this is up on a Sunday and treat yourself throughout the week.


● 1.5 cup wholemeal flour
● ¾ cup wholemeal SR flour
● ½ teaspoon bicarbonate soda
● ½ cup desiccated coconut (extra to garnish)
● +/- 1 scoop vanilla protein powder
● ½ cup coconut sugar
● 3 ripe bananas, mashed (extra to garnish)
● ¾ cup milk
● 2 eggs, lightly whisked with fork


1. Preheat oven 160 degrees. Grease loaf tin and line with baking paper
2. Combine all dry ingredients in large bowl and mix well
3. In a small bowl combine mashed bananas, milk and eggs. Mix well
4. Add to dry ingredients. Mix well with wooden spoon
5. Pour into loaf tin. Garnish with thinly sliced banana and sprinkle with coconut
6. Bake in oven for 50-60 minutes or until a skewer comes out clean when tested
